Chevalier is a fan of cooler sites in the Languedoc, organic grape growing, and careful vinification, which plays a vital role in the makeup of this label. Les Bancèls grows organic syrah and grenache facing north and northeast on two parcels planted over schist. The mourvèdre vines tilt south. The attack begins with an inviting red fruit nose. On the palate, it opens with sweet black cherry dusted in white pepper and intense savoury garrigue, all with a silky texture throughout. No oak, just purity. Les Bancèls is old patois for terraces.
