Pentâge Winery Hiatus 2016

Skaha Bench, Okanagan Valley, British Columbia, CanadaPentâge must have a large cellar because they take the time to age their wines for you before release. 2016 was a fine vintage, and this blend comes in at a humble 13 percent full of dark black fruits balanced by supple tannins at this point, and a surprisingly elegant finish given its robust combination. Ready to drink with a splash decant, and serve with any beef or pork dish you can imagine, or a rich root vegetable sheet pan. The latest Hiatus 2016 is a decidedly different mix featuring a 36/32/10/8/7/7 blend of petite sirah, tempranillo, petit verdot, cabernet sauvignon, and mourvedre and merlot. Each variety is handpicked, hand sorted and barrel aged separately. The wines are matured solo for 18 months to dryness in new and neutral French and American oak.
