Planted on limestone slopes, Guilhem is a blend of 50% syrah, 30% grenache, 20% carignan, destemmed and co-fermented in stainless, where it spends 7 months aging prior to bottling. Smooth and silken, with forrest berries, wild cherries, lightly cracked pepper on a medium body, finishing with an alluring wash of salinity. Acidity is brisk, easily lofting this to the finish.
