Bachelder Bai Xu Vignes de 1981 Chardonnay 2019

Four Mile Creek, Niagara Peninsula, Ontario, CanadaBai Xu hails from Four Mile Creek, where some of the oldest vinifera plantings in Ontario grow. It's six kilometres from Lake Ontario and four kilometres from the Niagara River. The site is all Clone 95, now just shy of its twentieth anniversary. Bachelder is a minimalist in winemaking, similar to Meyer Vineyard winemaker Chris Carson. He uses French oak predominantly, and the fermentations are indigenous. After that, the result is all about the site, and this cuvée is metres from the Willms site. The style is as decadent as it gets with Bachelder, with more yellow fruit and a bit of baked pear, but all with the requisite acidity, complexity, and texture.
