Sicily, ItalyInsolia is one of the main Sicilian indigenous white grapes, very historic to the island, and Assuli cultivates it on their Carcitella estate, Mazara del Vallo, at 120-150m on rocky clay soils. This was fermented and rested briefly in stainless, on lees. Peach, pear, honeysuckle slides along the lightly waxen, aromatic, dry palate, finishing with a raft of sandy, scrubby, Mediterranean spices.
