Côte de Beaune, Côte d'Or, Burgundy, FranceThis comes from three parcels in Auxey-Duresses: le Village, les Closeaux, and les Hautées, with calcareous, well-draining soils and vines averaging 34 years. This was fermented in a mix of stainless and wood, before resting in barrels (10% new) with bâtonnage for 10 months. You can feel the structure of the soils, and elevage, right away, with stony bones framing lemon, green apple, fresh hazelnuts through the lingering, limestone buzzing finish.
