Canary Islands, SpainThis listan preito (aka País, or Mission) grows at 900-1200m in Santiago del Teide, high on the northwestern volcanic sandy slopes of Tenerife, in the Canary Islands. From ungrafted 70-100 year old organically farmed bush vines, this was destemmed by parcel, each vinified in a mix of concrete and open tubs, with 10-20 days maceration. The lots then went into concrete (40%) and neutral French barriques for MLF and 8 months' aging, without bâtonnage and sulphur. It was bottled without fining or filtration. This opens with a dusting of black pepper before coursing into a reductive ruled lighter red with red currant, wild raspberry, tart cherry, sapid plum, iris, thorns, and ample white pepper. Tannins are slight, and acidity is lofted, taking this lighter natural red to a lingering saline finish. Serve with a chill.Tasted: 15 August 2021Tasted by: Treve RingPrices:
