Okanagan Valley, British Columbia, CanadaPét-nat is a short form for pétillant naturel, a term the French use to mean a naturally sparkling wine. It’s a shortcut that skips blending dry wines and secondary fermentation in the bottle for a one-time fermentation by bottling the juice while it is still undergoing its primary fermentation. It is also referred to as methode ancestral, or, the old way. Covert Farms uses a rare BC planting of organic zinfandel from its McIntyre Bluff Coyote Block. It begins native fermentation in stainless before heading to bottle. The cloudy pink colour and copious bubbles preview a cranberry fruit attack with apple blossoms and sweet candy before the dry finish.
