Covert Farms Sparkling Zinfandel Methode Ancestrale 2020
Okanagan Valley, British Columbia, CanadaPét-nat is a short form for pétillant naturel, a term the French use to mean a naturally sparkling wine. It’s a shortcut that skips blending dry wines and secondary fermentation in the bottle for a one-time fermentation by bottling the juice while it is still undergoing its primary fermentation. It is also referred to as methode ancestral, or, the old way. Covert Farms uses a rare BC planting of organic zinfandel from its McIntyre Bluff Coyote Block. It begins native fermentation in stainless before heading to bottle. The cloudy pink colour and copious bubbles preview a cranberry fruit attack with apple blossoms and sweet candy before the dry finish. When it comes to pét-nat, every bottle is an experience, so if you are adventurous. dive in.Tasted: 12 March 2022Tasted by: Prices:BC | $28.59 | 750ml | winery online, select private retailers |
