Pascal Jolivet Sancerre 2019
Sancerre, Upper Loire, Loire, FranceFounded in 1987, Pascal Jolivet owns 70ha in the Loire, 45 of which are in Sancerre. This, Pascal Jolivet's 'signature Sancerre' is a specific blend of their Sancerre terroirs: 50% limestone, 30% limestone clay, and 20% flint. Each terroir is native fermented and vinified separately in stainless tank with up to 6 months on fine lees before blending. It's interesting to understand the parts here: Limestone brings minerality and finesse; Limestone clay enhances fruit and richness; flint provides structure and minerality. This certainly transcends grape, and is a harmony of place. This organic wine hums along the tightly wound palate with white grapefruit, green apple, fennel, and a fine slick of lees. Throughout is a potent stony note, drawing this to a lengthy, subtly flinty finish.
