Oliver, Okanagan Valley, British Columbia, CanadaA pinot noir-chardonnay blend predominantly sourced from Summerland, with 30 percent from Okanagan Crush Pad's Secrest Mountain Vineyard in Oliver, this is a citrusy, mineral-driven sparkling wine done in a zero dosage style. It's not necessarily missing the dosage, either. There's ample fruit here, with acidity that is crisp but not austere, giving it a balance that will be perfect alongside a dozen oysters. Oliver, Okanagan Valley, British Columbia, CanadaIt is my first look at The 2017 Bub, presenting as tight as they come at this point. It is a classic example of the potential of BC fizz, given its naturally high level of acidity. The mix is 55/45 pinot noir / chardonnay split, with the divide of 70/30 between Summerland and Oliver fruit. The fermentation is also split between stainless steel and concrete tanks before heading to bottle and a 30 month sleep on its lees with zero dosage. It is fresh and electric, maybe too much, but give this some time to settle into the bottle. There is no rush. The palate is full of lemon pith and earthy, nutty mineral lees with a precise, clean, chalky finish. A creamy cheese is currently an excellent match to tome down the acidity and smoothly put the finish. One to watch.Tasted: 26 February 2022Tasted by: Prices:

The mix is 55% Pinot Noir, 45% Chardonnay, 70% of which come from Summerland's Watkins Family Vineyard, and rest from Secrest, in Oliver. Primary fermentation was in a mix of stainless and concrete before bottling and secondary fermentation for 30 months prior to bottling, with zero dosage. This was disgorged in early summer 2020.This is as tight and nervy as I remember it, albeit now with some adolescent padding. Earthy lees, green apple, lemon pith, parmesan stream across the tight palate, buzzing with a chalky stoniness, and finishing long with racy lemon pith and an anise kiss.
