Wild yeast fermented, this is a knockout floral affair flecked with spice and aromatic dried herbs. The attack is intense, offering juicy, citrus, peach lined with savoury tarragon notes. Off-dry at 17 g/l residual sugar, but you hardly notice it thanks to a stony, mineral, electric undercurrent. Ready to drink but will live forever. Think seafood, chicken, pork, or cellar forever.
