IGP Côtes Catalanes, Roussillon, Sud de France, FranceDomaine Gauby is near the tiny Roussillon town of Calce, nearby the Cataluña border with Spain. This is an old vine blend of Chardonnay, Macabeau Grenache Gris, Muscat, and Vermentino, native fermented and in unlined cement, where it remains until bottling, without fining or filtrations. Gérard Gauby uses no additives or deletions in his low interventionist winemaking. Honeysuckle, white peach, quince floods the soft palate, now cusping with age into white mushroom, white tea leaves, truffles, gently gliding along a waxen palate. Now's the time to drink this, while the freshness is still present to match the weighted fruit.
