Sperling Vineyards Speritz Pet Nat 2018
Okanagan Valley, British Columbia, CanadaThis wine has taken a dramatic turn since I tasted it last, going from a lightly sweet and candied fizz to a bone dry, light and lean one. With sour lime, sour lemon, unripe melon, green apple and dish soap notes on a lightly frizzante palate. This biodynamic, pét-nat is entirely Perle D'Csaba vines, planted in 1934. Natural in every turn, from the native ferment to the no sulphites, to leaving the wine unfiltered in bottle, on its lees.
