Oliver, Okanagan Valley, British Columbia, CanadaPolaris is one of three traditional method sparkling wines under Township 7 winemaker Mary McDermott, ex of Ontario's Trius Winery. Polaris is the brightest star in the Ursa Minor constellation and is the centre of the new releases alongside Eclipse and Equinox. This blanc de blanc comes from Hidden Terrace vineyard in Oliver, as well as the winery's home vineyards in Naramata, and spent 18 months on lees before disgorgement with 8 g/l RS. Toast, crunchy red apple, lemon is livened with ample green apple acidity, easily matching the Brut dosage and lovely creamy, lees-lined mouthfeel. McDermott has made a bunch of fizz at Trius Winery in Ontario, so I am expecting good things. Polaris is the brightest star in the Ursa Minor constellation and is the centre of the new releases. It’s a blanc de blanc, made from chardonnay grown at one site in Oliver, along with the estate vineyard in Naramata. It has spent a reasonable 18 months en tirage to add some texture and mouthfeel. The attack has a ripe apple demeanour, and the entry is soft and round with creamy baked apple, flecked with sweet lime and peach.
