Township 7 Seven Stars Polaris 2019

Okanagan Valley, British Columbia, CanadaPolaris is a blanc de blanc chardonnay sparkler grown at Hidden Terrace (Oliver) and Township 7 Estate Vineyard (Naramata). The grapes are picked with high natural acidity to sustain the bottle throughout its secondary fermentation, and the wine spends 21 months on tirage building complexity of flavours and texture before it is disgorged and dosaged and put back in the cellar for another nine months prior to release. Look for a lively but fine mousse that offers citrus, green apple, and lees. Red apples and stone fruits disappear into a lean, tight, racy finish dotted with minerals and more subtle lees characters. Complex and sophisticated.
