Township 7 Polaris Seven Stars 2016

Oliver, Okanagan Valley, British Columbia, CanadaPolaris is one of three traditional method sparkling wines under Township 7 winemaker Mary McDermott, ex of Ontario's Trius Winery. Polaris is the brightest star in the Ursa Minor constellation and is the centre of the new releases alongside Eclipse and Equinox. This blanc de blanc comes from Hidden Terrace vineyard in Oliver, as well as the winery's home vineyards in Naramata, and spent 18 months on lees before disgorgement with 8 g/l RS. Toast, crunchy red apple, lemon is livened with ample green apple acidity, easily matching the Brut dosage and lovely creamy, lees-lined mouthfeel.
