At The Hatch they liken the smoke effect to an added layer of intensity to the wine, with notes that remind of a peaty Scotch. Rather than fight it, the team chose to embrace the smoke, citing it to be an authentic reflection of their plot of land, and thus a climat of that time. It’s rich and dark with a healthy dose of tannins and a strong mix of lifted black cherry and fireplace ash.
