Santi Solane Valpolicella Ripasso Classico Superiore 2015

Verona, Veneto, ItalySanti dates back to 1843, when Carlo Santi established a wine cellar behind the Lessini Mountains in the heart of Valpolicella. The blend is 70 percent corvina and corvinone, and 30 per cent rondinella, and 100 percent impressive. Clean and dry, the fruit is soft and fleshy with just a hint of spice. The plate is a mix of black fruit and black licorice and just a whiff of chocolate, all in perfect balance. Post ferment the wine is stored in stainless steel until the grapes are dried and pressed. It is then repassed over the lees of the Amarone, spending another twenty days on the skin to add body and depth, before 18 months in cask and barrels. It takes its name from the word for the rooms with no ceilings, known as olane. These are rooms where the grapes are racked to receive plenty of sunlight, helping to partially dry the fruit.Tasted: 25 September 2017Tasted by: Prices:
