South Australia, AustraliaThe Penfolds Max’s Cabernet Sauvignon honours former chief winemaker Max Schubert (1948-1975), a legend in Penfolds history. The Max’s cabernet Sauvignon is all about the Penfolds ethos, mixing fruit from Wrattonbully, McLaren Vale, Coonawarra, Barossa Valley and Padthaway that is all aged 12 months in American oak (5 percent new) with the balance in seasoned American and French oak hogsheads. Classic Oz with brilliant cassis and sun-dried tomato with a fabulous texture. The acidity is in check, giving the wine a slightly hedonistic side that is welcomed. Long and dense with spicy but well-grained tannins, this will age effortlessly for a decade. Impressive red for roasted meats.
