Champagne, FranceThe history of Champagne always allowed for the “rich" category for bottles loaded with residual sugar. Today at Veuve Clicquot they continue the tradition of rich with this label now expressly made for mixology maestros and the Champagne cocktail. AT VC they suggest the signature notes of this bubble, sweet pears and super bright sweet apples, are “magnified by the presence of selected ingredients: pineapple, grapefruit zest, cucumber, celery, peppers or tea, all on the rocks.” Certainly sweet, with dense brioche, pear pie and vanilla creme caramel, though fortunately with a fine wave of acidity to support, this is appropriately dessert-ready.
