Cono Sur Silencio Cabernet Sauvignon 2010

Valle del Maipo, Region del Valle Central, ChileThis super premium cabernet sauvignon might just be the thing to change your mind about Chile. This cabernet sauvignon, sourced from five vineyards in the Maipo Valley, is splashed with 2 percent carmenère. Grown on gravelled alluvial soils it spends 22 months in new French barrels plus another 60 days in stainless steel before bottling. Dusty gravels, dried earth, dried tobacco, dried florals, fresh thyme and ample anise fill this savoury, structured red, one intertwined with black cherries and thorny blackberry. But this is not about the fruit. Appealingly fresh and medium bodied, this is restrained and elegant cabernet sauvignon. Graphite, salts and orange pith lingers on the finish. Angular (pleasantly) and characterful it drinks well now (decant) but will certainly reward with 5-10 years in the cellar.
