Cawston, Similkameen Valley, British Columbia, CanadaLight peach in hue, with ginger, orange, peach, dried apricot and piercing lime oil to lift the whole. Twenty-four hours skin contact before whole berry pressing counters the acidity with a bump of RS and 90 days on the lees with regular battonage. Sweet and sour on the short finish.
