Haywire The Bub Bottle Fermented and Aged 2014

Oliver, Okanagan Valley, British Columbia, CanadaThe blend is pinot noir and chardonnay picked from cooler sites in Summerland and Oliver. The goal is to make a fresh, crisp lean style fizz that works with tapas like bites. The palate is a mix of citrus, sea salt and mineral notes mixed with green apples and just a hint of toasted croissant. The finish is vibrant with excellent acidity and what seems to be a trademark lean Bub style.
