Whole cluster pressing and fermentation in old neutral barrels builds mouth-feel and complexities, resulting in an elegant wildflower and honeyed pour. A sheen of wax on the fuller palate helps the honeyed melon, ripe pear and quince glide along, buoyed easily by moderate lemon oil acidity and lingering with fine almond spices.
