Thirty-five percent has been fermented and rested in French oak, with the remainder in stainless, preserving the crisp orchard fruit. Sonoma County, California, United StatesEvery year I write a similar note for this consistent sauvignon as it continues its quiet evolution to be a leaner, fresher, more electric style sauvignon. No heat spikes in 2013 led to longer hang times and fully ripe flavours. The fruit is a mix of 100 percent sauvignon from several Sonoma County AVAs. After a cold settling the juice spends time in 65 percent stainless steel tanks or 35 percent French oak barrels for fermentation. Look for a creamy fresh texture with flavours of honeydew melon and lemongrass.
