It is made from three classic Cava grapes: macabeo, parellada, and xarel·lo. The style is crisp, just off lean, with subtle notes of creamy lees and hints of fresh apples and apricots. The emphasis is on crisp, honeyed orchard fruit with just a hint of lees from ageing 15 months in bottle. There’s a notch more complexity here than the Organic Brut, and the mousse is more delicate, showing surprising poise for this price point. The attack is 'cava' dry, this is not prosecco, with nutty, floral, green apple aromas. The palate is creamy soft with more nutty, citrus, green apple, stony mineral, sea salt flavours.
