Stag's Hollow Cabernet Franc 2011

Okanagan Valley, British Columbia, CanadaNot unlike the 2010 with its roasted tomato paste and leafy black fruit aromas. The palate is soft the attack smooth with smoky cherry, tobacco oaky notes that finish short. The fruit was hand harvested, bunch sorted, de-stemmed fermented in one ton fermenters where 50% of the berries were left whole and uncrushed. It was aged for 18 months before being blended and bottled without fining or filtration. The fruit is both Oliver and Osoyoos based.
