Simonsberg - Stellenbosch, Stellenbosch, Coastal Region, South AfricaThe Paul Sauer mix is 69% cabernet sauvignon, 19 merlot, and 12 cabernet franc matured in all new 225 litre French Nevers barrels for 22-26 months. I like this wine in the glass with its smoky, stony mineral elegant red fruit aromas and earthy, cedar, cassis flavours flecked dried herbs tea leaves and plenty of fine grained tannins. Elegant stylish and one of the few in the tasting you could probably drink now with roast beef. Impressive.
