Simonsberg - Stellenbosch, Stellenbosch, Coastal Region, South AfricaKanonkop is one of the most respected traditional producers in South Africa, recognized for producing age worthy wines. This icon red, named after Kanonkop’s patriarch Paul Sauer, blends 70% Cabernet Sauvignon, 17% Merlot, and 13% Cabernet Franc from estate vineyards in WO Simonsberg-Stellenbosch (a small ward located within Stellenbosch), and from primarily dry land vines averaging 31 years on decomposed granites. This spent 5 days on skins before resting 2 years in new 225L French barrels. Give this young wine some time to breath and unfurl to reveal sultry dark cherries, cassis, tobacco, gravels, and crushed stones, perfumed with alluring darting florals, and wrapped with sueded tannins that sink into the depth of fruit, lifted with some tomato leaf acidity, and finishing with a lick of worn leather.
