Typical of the cool 2011 vintage, this is lean and light, but now complexed with some bottle age. Salted almond, anise blossom, pear skin with a potent slick of herbal lees and a lashing of grey sea salt on the finish. The attack is crisp, dry and elegant on the palate with apple skin, pear, ginger, spicy, butter, quince and grapefruit flavours.
