Similar to Yattarna is philosophy it is all about redefining the next half century if Australian chardonnay. After more than a decade of work this electric, lean, yes Burgundian style white wine is a shocking about face from what many think Blass chardonnay tastes like. A selection of the best sites and the best barrels it is a true cool climate style. Most of the ferment is done with wild yeasts, in 100% French oak barriques and then it is matured for nine months with regular lees stirring. The texture is lean but with creamy notes. The flavours white peach, cashews and toast.
