Allegrini Palazzo della Torre 2001

Verona, Veneto, ItalyThe Palazzo della Torre with its 70/25/5 blend of corvina Veronese/rondinella/sangiovese is as smooth as it gets thanks to the use of an innovative use of ripasso. Some 70% of the grapes are vinified immediately while the remaining 30% are left to dry until the end of December when they are vinified and re-fermented with the wine from the fresh grapes. The result is a rounder style with lower acidity and more extraction than the regular Valpolicella Classico. The latest version is similar to the 2000 with its spicy mineral, black cherry jam, licorice root aromas. On the palate it's rich, dry and slightly tannic with more peppery, rootsy, black cherry jam, tobacco flavours.
