Selles-sur-Cher a Star of Loire

If I asked Rob (one of my co-workers), what his favourite cheese was, he would definitely say Selles-sur-Cher (if he wasn't in the mood for Papillion Noir Roquefort).

Selles-sur-Cher was one of the first cheeses to be granted AOC Status (1975). It is produced south of the Loire River where the climate is mild: Sologne, Touraine, Berrichonne. Shaped like a round disc with bevelled sides, this ash covered goat milk cheese has a snow white interior and a chalky texture that becomes runny as it ripens with age. The ash helps maintain humidity on the surface of the cheese and aids in the growth of mould. The taste is slightly salty with a definite "Goaty" flavour, combined with a hint of sourness. The taste is heavy at first, after which it melts on the tongue. The flavour becomes more pronounced and nutty with age.  It has an aroma of goat milk and mouldy cellar.

The star of Fèvre's 2004's and one to buy. Look for a melon, vanilla, lees, and lemon oil nose with butter, honey, smoky flint, chalk and anise. Round, rich, elegant, dry and fresh. Waxy, lees, lemon, lime, green apple, buttery, honey, floral, pear, juicy flavours. Long and succulent with good acidity and delicacy but full. Excellent, can age 3-7 years.

Chablis, Burgundy, France
Citrus, floral, light honey, waxy, pear, baked apple, flint, lemon lime nose. Round, fresh, rich, fresh acidity but good concentration. Fresh, juicy, succulent palate with green apple, lime, honey, light vanilla, lees, butter, flinty mineral flavours. Very good length and balance, will need time. Just a slight green edge when compared to Les Preuses.

Round, fresh, dry, tight but full palate. Mineral, lemon, spicy, anise, chalky green apple skin flavours. Full but very dry and with high acidity and good structure. Needs another two to five years in the bottle to really grow into itself.

Chablis, Burgundy, France
Spicy, vanilla, lees, floral, melon, citrus, baked apple aromas. Ripe, round, elegant and fresh but tight with good acidity. Vanilla, lemon, mineral, spicy, melon skin, floral flavours. Good finesse and length with some vibrancy. Fine.

Floral, buttery, citrus, honey, mineral nose. Round, dry, elegant palate but a bit very and disjointed with the acidity. Butter, lemon, waxy, rind-y flavours. Not showing well now at the moment.

86/100 Delas Côtes-du-Ventoux 2004
Côtes-du-Ventoux, Southern Rhone, Rhone Valley, France
A little less fat than the super ripe 03, the latest version delivers more harmony and balance. The fruit is bright and bold with spicy, black fruit, almond, blueberry scents followed by warm soft mid-palate textures. On the palate there are hints of licorice, smoky black cherry and bits of orange. Fairly intense with a medium finish. Definitely a solid mid-week dinner red that will age a year or two more.

87/100 Château Pesquié Côtes-du-Ventoux Les Terrasses 2004
South of France, France
The latest Les Terrasses is 70/30 blend of grenache and syrah that perfectly reflects the classic 2004 vintage. Not to hot it has a freshness of flavour spiked with fruity floral hints and jammy berry fruit flavours. Only about a fifth of the blend sees wood and very little of that is new oak. This is well-priced and well made Ventoux that will undoubtedly improve in the bottle over the next three years. The winery suggests you pair it with terrines, poultry or grilled meats.

91/100 Château Pesquié Côtes-du-Ventoux Quintessence Rouge 2003
South of France, France
At Pesquié the Quintessence Rouge is an 80/20 blend of syrah and grenache that is selected from old, south facing vines that sit at an altitude of 230 to 260 meters. The '03 is a super warm year, aged 12 months in oak barrels (60% are new; 40 % are one or two years old). You'll love its clean fruit nose, the power and length of its licorice black fruit flavours and the supple textures. This is serious Cotes du Ventoux at a very fair price. Think venison, wild boar, or turkey.
