Fewer Canadians have more wine in their veins than Magdalena Kaiser, the daughter of Ontario wine pioneer Karl Kaiser, and a perpetual wine student and advocate who has lived and worked in the heart of Niagara’s wine region her whole life.
And worked it, putting it mildly: Magdalena fondly remembers bottling wine at Inniskillin alongside her dad when she was 5 years old. 40+ years later, firmly entrenched as a leader in the wine industry her father literally helped create, Magdalena has released her first book celebrating her exciting home region.
Niagara Wine + Food is a photo-laden cookbook profiling 44 Niagara wineries and their families. Magdalena visited each and chose 2 wines that she thought best reflected their mission and work. From that set of 88 wines, she developed 88 recipes, alongside winemakers and chefs, designed to pair with the wines while reflecting Niagara’s natural abundance.
After a foreward by Andrew Jefford, and a synopsis of Niagara and Ontario wines, terroir, and timeline, the alphabetized winery profiles and their pairings spill out across the next 240 pages. As someone who has been visiting Niagara over the past 15 years, it’s like flipping through a yearbook of industry friends while making mental notes of new kids on the block to taste. You needn’t know anything about the region, however, to lust over recipes like Asparagus Carbonara partnered with MW Cellars Aligoté (love that wine, Marty!), or Vigneron’s Coq au Vin, a Harald Thiel classic original, paired with his Hidden Bench Estate Pinot Noir.
The recipes, stretching across the seasons and ranging from starters through desserts, reflect the delicious diversity not only of the Niagara foodstuffs, but of the wines themselves. As Magdalena noted, “The golden age of Niagara wines has only just begun.”
