Vancouver, BC - Frank Pabst, has recently been appointed the new executive chef at Yaletown's Blue Water Cafe.

Born in Germany, Frank apprenticed under acclaimed chef Christo Lang at La Becasse, Aachen before moving to France where he worked his way through a collection of Michelin starred restaurants in the Cote d'Azur.  During this four year period Frank became highly skilled in the classical techniques that shape his cooking style today, whilst developing a deep respect for the ingredients.

It was 1993 when Frank moved to Vancouver, working at Chartwell restaurant in the Four Seasons Hotel before joining Chef Robert Feenie at Lumiere shortly after its opening.  As chef de cuisine he played an integral role in establishing the restaurant's acclaimed reputation.  In 1999, in partnership with Maitre d' John Blakley Frank opened Pastis in Vancouver; after a much anticipated opening the restaurant instantly received high praise from critics and promptly collected a number of awards including gold, Best New Restaurant and silver, Best French Restaurant, Vancouver magazine.

Joining Blue Water Cafe in November 2003 Frank will apply his own spin to the seafood menu demonstrating the flair and highly skilled technique he has become known for. He describes his style as "uncomplicated yet captivating" and insists that his "ingredients are shown the respect they deserve; be it sustainable fish line-caught, by hard working fishermen in our regional waters or heirloom vegetables that have been pampered on a field by a caring grower, showing respect for the fruits of labour equals appreciation for the people who help provide you with them."

His new menu will be bursting with seasonal flavours conveying a balance of connected tradition and apparent innovation; dishes will be light for the modern diet of our health conscious guests.  In joining the team at Blue Water Cafe Frank is excited for the opportunity to work in a beautiful setting, to lead and inspire a brigade of talented chefs in an energetic open kitchen.  His goal is to continue to grow Blue Water's reputation as one of the leading seafood restaurants in Canada and to deliver an unrivalled dining experience.
