Canada's Grand Champion Cheese

Cheese: La SauvagineProducer: SaputoType: Washed rind / cow's milkOrigin: QuebecSuitable Wine Types Gewürztraminer / Riesling Price / 100 gr $3.25 I was honored to be included as one of a seven member jury panel for the Canadian Cheese Grand Prix held in Montreal earlier this year.  Over the course of one weekend, the panel tasted over 187 cheeses in 17 categories.  We would taste all qualifying entrants in one category at a time.  Some categories such as fresh cheeses had as few as 7-10 entrants, while categories such as soft ripened or smoked had as many as 30 entrants.  It was a fascinating look at how many different styles of cheese are being made in Canada, and by such diverse companies.  Some cheese participating were from small farm made producers, while others were manufactured by huge milk cooperatives.  The winner of the washed rind category was also the overall winner or "Grand Champion" of the 2006 awards.  This cheese, La Sauvagine, is made in Quebec by La Fromagerie Alexis de Portneuf, a division of Saputo Foods.  It is made to order in small batches to keep quality control tight, as it is a very delicate product.  It is runny and  boasts a smooth, creamy texture and a delicate flavour with hints of grass and a milky sourness.
