Beaufort d'Alpage

Beaufort is made from the milk of Tarines cows found in the Savoie region under strict AOC regulations.

At Les Amis du Fromage we have recently received a shipment of Beaufort d'Alpage made in mountain chalets during the summer months when the cows are grazing in the high alpine meadows.  Each cheese must be made with the milk from only one herd of cows.  It takes all the milk produced by a herd of 45 mahogany coloured Tarines cows in one day to produce one 100 lb wheel. It is a rich, firm cheese that smells of the wild flowers and grasses of the meadows, and has the sweet, rich flavour of the milk. The taste lingers in your mouth long after the cheese is gone.

The creamy texture of Beaufort d'Alpage is well suited to white wines or if it has to be red merlots or cabernet sauvignon. Wild card pairings could include Sauternes and Vintage Port.

Bollini is a Neil Empson creation that offers ripe citrus, apple fruit, streaked with mineral, cool-fruit scents. Ripe apple/nectarine fruit in the mouth. Sleek Euro-styling with some roundness and a leesy, nutty finish. Refreshing light, appealing style that represents good value especially when compared to many B.C. offerings.

Big smoky aromatic oaky nose with a peppery, spicy, sausage character. Similar flavours in a smooth warm round style with more smoky, spicy plum flavours in the aftertaste. Just a touch of acidity lifts the fruit and seems to reveal a touch of orange. Excellent value.

90/100 Ramos Pinto Late Bottled Vintage Port 1995

Douro Valley, Northern Portugal, Portugal

Deep colour. Spicy savoury peppery licorice nose. The aromas are black plum and licorice. On the palate, it is soft and velvety with peppery tea and more black plum and anise. Excellent drinking now. This is classic LBV port at a fair price.
