Any Port In a Storm...With Cheese

The holiday season is a great time to take a break and try some special wines.  There is a great abundance of ports in BC liquor stores and private wine shops right now, so you have a terrific excuse to try some.

The holiday season is a great time to take a break and try some special wines.  There is a great abundance of ports in BC liquor stores and private wine shops right now, so you have a terrific excuse to try some. Firm cheeses are an easier match to port, although rich and milder soft cheeses can be great.  Here are our top 10 picks of cheeses to match with port, in no particular order.

 

Cheddar - Aged Canadian or British Cheddar is a great compliment to many ports

 

Gruyere - Cave aged, Reserve or Etivaz.  Always from Switzerland and made from cow's milk.

 

Manchego - A firm Spanish sheep's milk cheese.  Easily identified by the zig zag patter on it's outer crust, it is firm and slightly fruity.  It pairs particularly well with Tawny style ports.

 

Saenkanter Gouda - Five year old Gouda from the north of Holland.  We like this particular one, but you can substitute any extra aged Gouda. 

 

Cantal - An A.O.C. cow's milk cheese from the Auvergne in France.  Firm, but with a creamy finish.

 

Supréme - French double cream brie with a rich texture.  You can substitute other double cream bries such as Brie de Maxim or le Dauphine, Du Village or even the slightly fuller flavoured Chaource.

 

Triple Cream Bries - Mild, young triple cream bries will be an excellent accompaniment, just as long as they are not too strong.  Any of the following would do fine:  St. Andre, Pierre Robert, Brillat Savarin, Delice de Bourgogne

 

Stilton - The classic combination for port is considered "classic" for a reason.  The match truly is perfect.  Try a variety of makes of Stilton (which should always be from Britain) and do your own comparisons.  Only six dairies, using the original centuries-old recipe, are licensed to produce the creamy ivory-hued king of cheeses.  We currently stock four:  Long Clawson, Tuxford & Tebbutt, Thomas Hoe's "Stevensons's Reserve and Colston Bassett from Neals Yard Dairy in London. 

 

Saint Agur - A creamy, slightly salty French Blue.  Tasty, but not too strong to pair with port.  As one of the top selling blue cheeses in our store, it can convert "non-blue cheese lovers"

 

Organic Blue Gouda - A rich tastings cow's milk Gouda with blue veins that is from Holland.

Remarks    Cockburn's Special Reserve is matured before release and as a "vintage character" port it is intended to reflect the Cockburn style. There's fine richness here with more body than the Ruby and better length. Special Reserve fruit is picked at the peak of ripeness from single varietal vineyards in the finest vineyard areas and a slightly longer fermentation produces a less sweet finish with more "grip." Look for a spirity cedar leather aftertaste.

Remarks    The crispness and "grip" that is the hallmark of Cockburn's tawny come from the judicious blending and the continuous refreshing of these wood-aged wines. Look for a nutty, rancio, cedar, earthy nose with hints of licorice, tea and raisins. Fiery, warm entry with intense earthy rancio, licorice, tea and nutty, butter with dried berry flavours. Elegant and not too sweet but definitely on the hot and fiery side.

Remarks    Originally five separate quintas, Canais was combined into a single large property around the turn of the century. Its abundant water supply, conserved from run off and channelled around the upper elevations, gave the property its name; canais is the Portuguese word for canals. Varietal blocks are being planted, a practice pioneered by Cockburn's in the region. Look for intense dark black cherry colour, black plum jam and grapey, black licorice, peppery, spicy, earthy nose with some chocolate notes. Rich, concentrated style but not too sweet with fiery entry. Noticeable tannins with good acidity. Dryer entry with earthy, very peppery, spicy, black plum jam, cherry, floral, licorice flavours. A bit more elegant than the strict Cockburn bottling but definitely another winner from the 2000 vintage. Try in ten years or so.

Remarks    Grapes from Cockburn's vineyards in the Villariça Valley and from Cockburn's Quinta dos Canais Estate provided the nucleus of the vintage port blend. In 2000 look for high-toned prune fruit aromas and heaps of alcoholic esters. Peppery plum fruit and more prune fruit flavours in the aftertaste. This is one hot, peppery spicy red with big intensity and whack of tannin yet to be digested. Not as approachable as some other 2000s but will no doubt blossom in another 10 to 15 years. Fine effort.

An elegant style, neither fat nor hot but balanced.

Remarks    The grapes for Dow's Late Bottle Vintage Port come from some of the same vineyards used to produce its Vintage Port. The wine is aged in oak casks for 4-6 years before it's bottled. The style of Dow's Ports is more structured and less sweet than most other houses and you detect it immediately on the palate. Drier firmer and with fine acidity it offers the plate a delicious mix of dark fruit flavours and spirit.

Remarks    In years when Fonseca does not 'declare' a classic vintage, it selects a small quantity of its best grapes from its own vineyards and produces a vintage wine exactly as a declared Fonseca Vintage. Guimaraens Vintage Port as is the case with this 1987 is slightly lighter and earlier maturing than its full-blown vintage declared cousin. Look for a peppery, spicy, tea leaf nose streaked with smoky, blackberry mash, licorice root and a touch of fiery alcohol. Rich, round, elegant and somewhat sweet but with balance and dry, light tannins. More pepper and stewed black tea flavours with licorice root and earthy, plum jam flavours. Quite intense and warm on the palate, nearly ready but can certainly age a few more years.

Very rich, ripe, round stylish port with amazingly soft but substantial tannins and grip. Bags of blackberry and dark plum jam fruit with big licorice, pepper, spicy tea notes. Drinkable with strong cheese now but we say wait 10 to 15 years. Very Fonseca - opulent, aromatic, structured and engaging throughout the ageing process.

Remarks    The "Six Grapes named derives from the Graham emblem that exhibits six grapes the highest quality designation used at the property to classify the best lots of wine. The Port is an unfiltered reserve produced from grapes primarily grown at Graham's Malvedos Vineyards. It's meant to be modern in style as in fresh and fruity and ready to drink but over the years the wine has gained grip and weight and is considered to be less ruby port and more late bottled. Sweet in the Graham style yet mellow and full of soft plummy fruit. It's a fine youthful port that you can sip now. The winery recommends you serve Six Grapes with chocolate cake or a rich cheese.

Remarks    The first vintage to be declared since 1985 produced a very small but high quality harvest. This is a big port with spicy, black tea, peppery, plum jam, licorice root nuances on the nose some orange peel and smoke. The entry is supple with ripe, smooth tannins and cherry, plum jam, peppery, spicy, resiny, licorice root and cola flavours. Still a touch fiery and youthful at present but wonderful balance. It's drinkable now but will improve over the next 10 years or more.

Remarks    In 'declared' vintage years, the wines of Malvedos form the fundamental part of the blend that makes up Graham's Vintage Ports. In other years when there is not enough top quality wine for Graham's to declare a "vintage", the wine of Malvedos is bottled on its own, unblended, when two years old and left to mature in bottle like other Vintage Ports. But unlike declared Vintage Port, Malvedos Vintage is only shipped when ready for drinking by which time it is usually a decade old. The Quinta's name is derived from the notorious rapids known as the 'Malvedos' or 'bad ways' which existed below the property before dams were built on the Douro River. Look for big peppery, spicy, tea, licorice root, resiny, smoky garrigue nose with black plum jam. Fat, round, ripe and somewhat fiery palate with very peppery, spicy, smoky, black tea, blackberry and prune palate. A slightly dryer style with some tannin to shed. Needs another 3-4 years to soften. Good.

Remarks    Crasto vintage port is produced from grapes grown in 100% Grade "A" old vineyards, with an average age of plus 70 years. The field plant of over thirty different varieties were hand picked and then 100% foot trodden using natural yeasts in the estate's traditional stone "lagares." The wine was bottled without any filtration or fining after two years in wood. Look for a peppery earth and licorice nose that reflects more terroir than fruit. It is super rich on the palate with a spicy plum and raspberry flavours in the aftertaste. Quite elegant and peppery with a tea leaf and dried plum skin finish. A solid effort here for mid term drinking that should be perfect for restaurants.

Remarks    Cristiano van Zeller's Reserve Port is a Vintage Character (old definition) now called a Ruby Reserve. In reality it is blended and bottled as a Crusted Port but he begins selling it without the minimum requirement of three years in bottle. The blend of the Lote nº 01 is almost all from the 2001 vintage (almost 90%), with a bit of 2000 and 2002 to sparkle it up. The Lote Nº is intended to indicate the base vintage year of the blend (00 for 2000, 01 for 2001, etc.). Look for a peppery, fiery, spicy, black licorice candy, tea, black cherry aromas with some citrus peel. Rich, round, warm and full with some tannins. Chocolate, black cherry jam, tealeaf, raisin square, peppery, black licorice flavours. Good acidity but quite warm on the finish. Needs 3-7 years or try with cheese or a chocolate lava dessert. A hybrid vintage port style.

Remarks    The Taylor Vintage blend is based on the wines of the company's Quinta de Vargellas estate, with their firm tannic structure and the exotic scented nose. These are blended with the dense and powerfully fruity wines of Taylor's Pinhão valley property, Quinta de Terra Feita. Alistair Robertson, who has spent 33 harvests at Quinta de Vargellas, noted: "The ripening conditions at Vargellas were among the best that I can remember. Yields were on the low side but the grapes were in very good condition, firm and thick skinned, producing a huge amount of colour." Look for super ripe blackberry fruit and plum nose with pronounced flecks of earth, pepper and licorice - almost a touch gamy. Another firm lean well-structured port with fine intensity, big tannins and more super ripe blackberry plum fruit. Not as lively as the Niepoort but it has wonderful density and balance. Lovely wine and well worth cellaring.

Remarks    Taylor's pioneered dry white aperitif port over sixty years ago, unde the Chip Dry label first blended in 1934. The Special White Port is a much sweeter version made from mostly malvasia fina grapes. White Port is one of the most versatile of aperitifs. It may be drunk in the traditional way, chilled in the classic port wine glass, on its own or with a twist of lemon, accompanied by roasted almonds, olives or dry biscuits. It also makes an excellent mixer and is delicious as a summer drink with ice and tonic water or soda. The colour is pale, the nose sweet, rich and alcoholic. There's a floral anise flavour with just a touch of oak and caramel in the finish. A fun and decidedly different drink.

Remarks    Tobreck's ode to Muscat de Beaume de Venise is The Bothie: a fortified sweet Muscat blanc a petits grains. Expect an enticing apricot, peach, minty, buttery, floral nose. On the palate it's round with soft, fresh buttery, muskmelon fruit spiked with minty, cooked peach, floral, orange flavours. We love the clean fresh non-cloying finish. Elegant.

Remarks    Very peppery, spicy, black berry and plum jam, stewed apple, very aromatic with fresh fruit notes in the background. Ripe, round and somewhat tannic, has big licorice, peppery, earthy, mulberry, red plum jam flavours. Fresh and lively with good acidity. Very full with good grip, one of the best young Warre's tasted - quite big.

Remarks    Warrior is the oldest mark of Port having been shipped continuously since the 1750s. The style has changed little over time. It's aged in seasoned oak casks for 4 to 5 years before being drawn off and bottled following a light filtration. Warrior Special Reserve is ready for immediate drinking and like the Six Grapes does not require any decanting or ageing. Look for dark, intense fruit and a strong chocolate/mocha flavour. Not as sweet as the Warrior and not as dry as the Dow. A pleasing fireside sipper -- break out the toasted walnuts.

Remarks    Portacinco is a blend of five traditional Portuguese grape varieties planted around the winery at Woodbridge and in the case of the 1997 some 75 percent is Touriga. Very warm with tobacco, black cherry kirsch, licorice, chocolate, prune and spicy aromas. Rich, hot, round, sweet and smooth with chocolate, dried fig, prune plum, spicy, marmalade flavours. Long and intense with a hot, fiery finish. Solid non-Portuguese, fortified wine.

Remarks    Nutty rancio buttery aromas. Certainly has the nutty pruny Tawny character. Ripe raisins and butter with a hint of muscat. Smooth rich and round with some alcohol peeking through. Good value. Light the fire, grab a book and let the world rush by.
