On Seven Chardonnay 2021
Niagara Peninsula, Ontario, CanadaOn Seven is a relatively new boutique Niagara winery owned by passionate wine aficionados Vittorio & Sula De Stefano. The De Stefanos bought an abandoned 7 acre vineyard (hence the name) in 2009 in Four Mile Creek, and under the guidance of consultant viticulturist and founding winemaker Peter Gamble, prepped the site for 3 years before replanting organically in 2014. This is primarily Dijon clone 76, planted 2014, with a small percentage of grapes from their 2015 planting of Dijon clone 95, and the 2018 plantings of Dijon clone 96. This was whole cluster pressed and transferred to French oak barrels (25% new) for native fermentation and 20 months aging. This hand labelled paint pen bottle is one of only 30 cases, and a barrel selection from the 2021 vintage. Pouring a glowing lemon hue this powerful white is sharpened with reduction, giving a pencil shavings edge to its white peach, green apple fruit. Light toast, marzipan, and honeycomb season, while the lees-deck palate bases this creamy, powerful white, lingering on the finish with crushed stones.
