Okanagan Valley, British Columbia, CanadaThe Aspect Collection is all about high quality, terroir driven wine, and Block 5 remains CedarCreek's flagship chardonnay. This high-elevation Home Block parcel brings elegance, power, and precision, and its aspect plays a key role in ripening and final quality. The fruit is whole bunch pressed and wild fermented in German and French oak vessels before aging in oak. As is done in Bourgogne, it spends about 90 days in stainless steel to integrate and tighten the wine. The nose is typically reductive, with flinty minerality, citrus, white stone fruit, and saline notes. The palate is very similar, with richer textures and a long, persistent finish. This wine will improve through '28 and '29 in the bottle, so there is no rush to drink it. It is certified organic.
