Thompson Valley, British Columbia, CanadaThe Thompson Valley, once thought to be on the wrong edge of cool climate, is turning out to be a good bet for wineries in search of cool climate vineyards. This Prosecco-like sparkler, made by the Charmat method, is full of fresh peach, pineapple, green apple, and Bosc pear. The mousse is light and a touch foamy, but otherwise fun. This is best served on the patio, well chilled, with favourite spicy summer bites.
