Beamsville Bench, Niagara Peninsula, Ontario, CanadaOff 30 year old vines on their Niagara Escarpment estate Cave Spring Vineyard (CSV), this riesling underwent 18 hours of maceration before a native ferment in 3800L oak cask (50%) and 25% each in neutral 225L and 500L oak, with full MLF. It was then barrel aged for 12 months on lees. Pouring a deep lemon hue, this opens with pear butter, green apple, and a kiss of kerosene, before a pithy citrus palate with grippy phenolic sides.
