Cave Spring Gamay CSV 2023
Beamsville Bench, Niagara Peninsula, Ontario, CanadaOff their estate Cave Spring Vineyard (CSV) on a hillside of the Niagara Escarpment, on stony clay loams, this gamay was 25% whole cluster / 75% destemmed (with 30% stem return) foot crushed and native fermented before heading to barrel for 20 months in a mix of 225L and 500L barrels. It was bottled unfiltered. Dark plum, boysenberry, wild blackberry fill this darker shaded gamay, with darts of VA aiding the lifted acidity.
