Beamsville Bench, Niagara Peninsula, Ontario, CanadaFrom their estate Cave Spring Vineyard, on a limestone-clay sloping terrace overlooking Lake Ontario, this gamay is tipped with 5% pinot noir. After a month long whole berry maceration and native ferment, this aged 1 year in a mix of neutral 225L and 500L oak barrels before bottling, unfiltered. Fragrant raspberry, wild cherry is seasoned and structured with integrated oak, with lingering toast and a bitter cherry note on the finish.
