Beamsville Bench, Niagara Peninsula, Ontario, CanadaOff their hillside estate Cave Spring Vineyard, at 125-155m, this riesling, off 23 year old vines, underwent an 8 hour maceration and 2 month native fermentation, 80% in stainless steel and 20% in 3500L cask. It remained 8 months on lees before bottling. Crisp pear, green apple, crunchy Asian pear, starfruit sails along the light bodied, sleek palate, finishing with lime sherbet on the dry finish.
