Pouilly-Fume, Upper Loire, Loire, FranceJonathan-Didier Pabiot is a young revolutionary in Pouilly-Fumé, revolutionizing his family’s domaine with certified organic and Demeter certified biodynamic practices. Léon comes off older vines (up to 50 years) rooted in limestone and silex. It was native fermented in a mix of stainless and concrete, where it rested 12-14 months on fine lees. Tight, taut white grapefruit and thistle rule this sleek white, wrapping around a candied lemon sweetness on the core, and finishing with crushed stones.
