Chablis, Burgundy, FranceDomaine Seguinot Bordet is one of the oldest family run estates in Chablis. Current owner, Jean-Francois Bordet’s family has run the estate since 1590, and the winery sits in the pretty village of Maligny, just north of the town of Chablis. The family has 16 hectares of vineyards on the right bank of the river Serein, and vines up to 106+ years old, possibly the oldest of the region. This classic Chablis was fermented in their unusual horizontal fermentation tanks, with a small amount of skin contact for additional complexities. Crystalline lemon pith and peel, green apple buzzes through this sleek white like lightning, finishing with chalk dust.
