Domaine Bouard-Bonnefoy Saint-Aubin 1er Cru Le Charmois 2023
Burgundy, FranceThis family estate was established in the 1920's, and today is under the careful watch of Fabrice Bouard and his wife Carinne Bonnefoy. Le Charmois comes from 30-60 year old vines on a steep slope from 200-300m, and stony soils over solid limestone. The fruit was pressed in an upright wooden press, hand-cranked, before a native ferment in French oak (20% new), where it rested 1 year. Alluring and well-handled flinty notes are woven throughout this fresh Saint-Aubin, with lovely Côte de Beaune weight but still very chiseled shape. Lemon curd, green apple is decked with ample lees, kissed with flax and studded with flake salts.
