Chassagne Montrachet, Côte de Beaune, Côte d'Or, Burgundy, FranceThis family estate was established in the 1920's, and today is under the careful watch of Fabrice Bouard and his wife Carinne Bonnefoy. Vergers faces east, on a clay-limestone slope around 250-300m, near the border with Saint-Aubin. Farmed biodynamically, this was pressed in an upright wooden press, hand-cranked, and native fermented in French barrels over 1 year (20% new wood). This electric wine is chiselled and shaped with flint, wrapping around nimble lemon, pithy white grapefruit, crunchy green apple, and ample flake salts.
