Golden Mile Slopes, Oliver, Okanagan Valley, British Columbia, CanadaThe '25 Cabernet Franc Pét'Nat comes from the stony, gravelly, sandy and loamy Alvail Vineyard in Oliver. The fruit is whole cluster pressed with no skin contact to produce a white sparkling wine. It is settled for 48 hours, then racked to stainless steel for fermentation. Bottled on October 9 while still fermenting, the wine completes fermentation in the bottle and rests on its lees for four months before disgorgement. The result is a clean, bright, dry white Cabernet Franc bubble with a mix of cranberry and pink grapefruit, streaked with a savoury note.
